Because someone asked, and because I should include a recipe whenever I’m discussing meals, here is my recipe for pecan burgers, courtesy of the kind ladies of the Seventh Day Adventist Church in Lapeer, Michigan, circa 1973.
1/2 c. ground pecans – 1 c. crushed Wheaties cereal – 1/4 c. oatmeal – 1 c. grated cheddar – 1/4 c. chopped onion – 2 eggs – 1 pkg instant vegetable broth (about a tablespoon) – 1/2 teaspoon salt – 1/8 teaspoon garlic powder – 2-3 tablespoons milk – 1/2 can soup (mushroom, celery or tomato) – 1/4 c. water
Mix all ingredients except soup and water. Form into smallish patties. Brown on both sides. Mix soup and water together and pour over burgers. Simmer on low heat until sauce is reduced and absorbed, about 30 minutes.
